Potato Chip Cookies

Ingredients:
1 cup of softened butter
1/2 cup sugar 
1 teaspoon vanilla
1 1/2 cup all-purpose flour 
3/4 cups crushed classic Lay's potato chips 
Confectioners' sugar to top 

Directions:
  1. Preheat the oven to 350° F. 
  2. Beat the butter until light and fluffy (at least 10 minutes)
  3. Add sugar and beat until smooth. 
  4. Add vanilla, then gradually add in the flour.
  5.  Add the crushed potato chips last and mix until just combined.
  6. Drop by teaspoon onto cookie sheet about 2 inches apart.
  7. Bake until slightly brown. Sprinkle with confectioners' sugar while still warm.

Yields 2 dozen cookies
