Whoopie Cookies
Ingredients:
Cake Cookies
1 1/4 cups all-purpose flour
1/2 cup unsweetened natural cocoa powder
1 teaspoon baking soda
1/8 teaspoon salt
1/2 cup softened unsalted butter
3/4 cup granulated sugar
1/4 cup packed light brown sugar
1 large egg at room temperature
1 teaspoon vanilla extract
Cream filling
1/2 cup softened unsalted butter
1 3/4 cups confectioners’ sugar
1 teaspoon vanilla extract
Directions:

Cream filling
1/2 cup softened unsalted butter
1 3/4 cups confectioners’ sugar
1 teaspoon vanilla extract
Directions:
- Combine the flour, cocoa powder, baking soda, and salt together in a large bowl. Set aside.
- Beat the butter on high for about 1 minute.
- Beat in the granulated sugar and brown sugar until smooth.
- Add in the egg and vanilla extract.
- Pour the dry ingredients into the wet ingredients and mix until a dough is formed.
- Cover the dough tightly with plastic wrap and chill for 30 minutes.
- Roll the dough into balls. Press down on the balls to slightly flatten. Bake for 6-8 minutes at 350 degrees.
- Remove from the oven and allow to cool for at least 5 minutes on the baking sheet before transferring to a wire rack to cool completely.
- To make the cream filling, beat the butter until creamy.
- Add confectioners’ sugar and vanilla. Beat on low for 1 minute, then on high until creamy. Spread cream filling between two cooled chocolate cookies.
