Whoopie Cookies

Ingredients:
Cake Cookies 
1  1/4 cups all-purpose flour 
1/2 cup unsweetened natural cocoa powder 
1 teaspoon baking soda 
1/8 teaspoon salt
1/2 cup softened unsalted butter 
3/4 cup granulated sugar 
1/4 cup packed light brown sugar 
1 large egg at room temperature 
1 teaspoon vanilla extract 

Cream filling 
1/2 cup softened unsalted butter
1 3/4 cups confectioners’ sugar 
1 teaspoon vanilla extract 

Directions:
  1. ​Combine the flour, cocoa powder, baking soda, and salt together in a large bowl. Set aside. 
  2. Beat the butter on high for about 1 minute. 
  3. Beat in the granulated sugar and brown sugar until smooth. 
  4. Add in the egg and vanilla extract. 
  5. Pour the dry ingredients into the wet ingredients and mix until a dough is formed. 
  6. Cover the dough tightly with plastic wrap and chill for 30 minutes. 
This step is mandatory for the recipe. 
  1. Roll the dough into balls. Press down on the balls to slightly flatten. Bake for 6-8 minutes at 350 degrees. 
  2. Remove from the oven and allow to cool for at least 5 minutes on the baking sheet before transferring to a wire rack to cool completely. 
  3. To make the cream filling, beat the butter until creamy. 
  4. Add confectioners’ sugar and vanilla. Beat on low for 1 minute, then on high until creamy. Spread cream filling between two cooled chocolate cookies.
